Featured Item: Cucumber!

What's behind the saying, "cool as a cucumber" ?  Apparently, it relates to the fact that cucumbers are cool to the touch.  Cucumbers are also pretty cool in having been shown to have antioxidant, anti-cancer and anti-inflammatory effects. The seeds, in particular, are nutrient packed. So, best not to remove them and eat them when you can.

To get the most out of your cucumber, it should be stored in the fridge and eaten within a few days. Smoothies are a very quick, easy, pleasing way to put the greens (including lettuce!), herbs and cucumber from your CSA basket to use before they perish. Here's one to try:

Cucumber, Mint & Kale Smoothie


3/4 cup of cucumber, peeled and cubed

1/2 cup of cantaloupe, cubed 

1/4 cup of fresh mint

1/4 cup of kale, stem removed

1/2 green apple, cored

1/2 cup of unsweetened almond milk

1/2 tsp vanilla extract

2 tsps honey

2 ice cubes

Add all ingredients to a blender and combine until smooth. This makes one serving. Bottoms up!
